Some of the elements that go into a meal are the way it is plated, the utensils, and even the place it is eaten. By collaborating with authors and craftsmen, L'évo can provide our guests with unique plates and cutlery. Everything, including the tables and lighting, and even the knives, has been custom-made.

鹿や猪、キジなど「レヴォ」の料理に使用するジビエは、熟練の技を持つ地元の契約猟師から直接仕入れ。衛生管理が行き届いたジビエ棟でスタッフが処理し、最も美味しくいただける状態で提供いたします。

The bounty of the local mountains
made delicious by our own hand.

Deer, boar, pheasant and other game used in L'évo’s meals are sourced directly from local contracted hunters who have years of experience. These meats are processed by staff in a special game wing with careful hygiene management to provide them when they are at the peak of their flavor.

焼きたてパンを。

「レヴォ」はパンもすべて手作り。レストランに併設したパン小屋で毎日、生地をこね、その日の料理に合わせてパンを焼き上げます。頬張るごとに広がる小麦の香りと味わいは焼きたてならでは。

Fresh-baked bread that is irresistible.

L'évo also makes all our bread by hand. Every day, we knead dough and bake bread to suit that day’s menu at the bakery hut adjacent to the restaurant. The aroma and taste of wheat that spreads your mouth with every bite is something only freshly baked bread can offer.
